The Rugged Spirit of the Chihuahuan Wild

Born from the arid expanses of Coyame del Sotol, Chihuahua, Desierto Sotol is a masterclass in patience and terroir. Unlike tequila or mezcal, which are made from agave, this spirit is crafted from the wild Dasylirion Leiophyllum (Desert Spoon) plant.

Each plant survives the desert’s extreme elements for 18 to 22 years before harvest, concentrating the soul of the landscape into every bottle. Under the expert eye of Master Sotelier Don Gerardo Ruelas, Desierto is a bold, uncompromising tribute to traditional Mexican craftsmanship.

The Craft of the High Desert

The production of Desierto follows a primitive, time-honored rhythm:

  • The Roast: Hearts are slow-cooked in a traditional willow and oak pit oven, imparting a deep, earthy foundation.
  • The Grind: Meticulously processed by hand using axe and knife.
  • The Ferment: A 5-7 day transformation in pine wood tanks adds subtle resinous notes.
  • The Still: Double-distilled in traditional copper, refining the spirit while preserving its rugged mineral character.

Tasting Notes: A Landscape in a Glass

  • Aroma: Intense notes of damp earth, pine needles, and a wisp of desert campfire smoke.
  • Palate: Bold and vegetal; layers of herbal spice, roasted pepper, and a distinct flinty minerality.

What is the difference between Tequila & Mezcal?
