Estancia Raicilla Pechuga

A Limited & Celebratory Spirit

Introducing a truly unique and groundbreaking spirit: the first commercially available Raicilla Pechuga in the USA, a limited seasonal release from Estancia Distillery. Crafted meticulously by Maestro Raicillero Alfredo Salvatierra, this exceptional raicilla elevates tradition with an intriguing infusion process.

The journey begins with 100% Maximiliana agave, roasted in an adobe oven to impart a signature smoky depth. The fermented agave is then double-distilled in traditional copper pot stills, capturing the essence of the spirit. What sets this raicilla apart is its third distillation, a "pechuga" process where a diverse array of locally harvested ingredients – toasted pumpkin seed, quince, apple, plum, lemon leaves, toasted almonds, chamomile, hibiscus, and orange blossom – along with a raw turkey breast, are suspended in the still. This aromatic infusion imbues the spirit with a symphony of nuanced flavors.

At a robust 48% ABV, Estancia Raicilla Pechuga offers a bold and unforgettable tasting experience.

Tasting Notes:

Prepare for a captivating and layered profile:

  • Initial Impressions: Subtle smoky undertones from the adobe oven mingle with bright floral notes of hibiscus and orange blossom, underscored by a hint of herbal complexity from the lemon leaves and chamomile.
  • Palate: The palate unfolds with a unique savory depth, where the richness of toasted pumpkin seed and almonds intertwines with the sweet and slightly tart notes of quince, apple, and plum. A delicate savory whisper from the pechuga adds an intriguing dimension.
  • Finish: The finish is long and complex, with lingering notes of toasted nuts, a touch of fruit sweetness, and a subtle earthy undertone that speaks to the artisanal production.

This limited-release Estancia Raicilla Pechuga is a testament to innovation and tradition, offering a rare and exquisite taste of Jalisco's spirited artistry. It is a must-try for adventurous palates and connoisseurs seeking a truly exceptional and celebratory spirit.

What is the difference between Tequila & Mezcal?

Tequila is a type of mezcal, much like how scotch and bourbon are types of whiskey.

Tequila and mezcal are both types of agave-based spirits that are popular in Mexico, but there are some key differences between the two. Tequila is made exclusively from the blue agave plant, which is primarily grown in the area surrounding the city of Tequila, about 40 miles northwest of Guadalajara. Mezcal, on the other hand, can be made from any type of agave plant, and is often made using traditional, labor-intensive methods.

One of the most noticeable differences between tequila and mezcal is their flavor. Tequila is typically smooth and subtle, with hints of fruit and spices, while mezcal has a more complex, smoky flavor that comes from the roasting of the agave hearts before they are fermented and distilled.

Another difference between the two spirits is their production process. Tequila is typically made using modern industrial methods, while mezcal is often produced using traditional techniques that have been passed down for generations. This can give mezcal a more authentic, artisanal character.

In general, tequila is considered to be a more refined and sophisticated spirit, while mezcal is often viewed as a more rustic and traditional drink. Both are popular in Mexico and are enjoyed around the world, so the best way to decide which one you like is to try them both and see which one suits your tastes.
