El Yope Mezcal Tobalá

Considered the "Crown Jewel" of the El Yope collection, the Tobalá expression is a rare and precious find. Crafted from the wild Agave potatorum, these agaves are much smaller than the common Espadín, often requiring dozens of plants to produce just a single small batch.

In the village of San Baltazar Chichicapam, Maestro Mezcalero Don Ismael Rosales treats this wild agave with the reverence it deserves. Through traditional pit-roasting and copper-pot distillation, he coaxes out the delicate, "feminine" complexity that has made Tobalá a favorite among the most demanding mezcal connoisseurs. 

Tasting Notes

  • Aroma: An incredibly pleasant and inviting nose. It opens with high-toned floral notes of lavender and wild rose, balanced by a soft, mineral-rich scent of wet earth and clay.
  • Palate: Remarkable for its "soft" personality. The entry is lovely and mild on the tongue, revealing layers of sweet tropical fruit, caramelized nuts, and a distinct buttery texture. Despite its 46% ABV, the heat is integrated perfectly, providing a gentle warmth rather than a sharp bite.
  • Finish: A masterclass in persistence. The finish is exceptionally long-lasting, leaving a refined trail of light smoke, dried herbs, and a final, savory hint of salt. 

The Experience

Because Tobalá agaves do not reproduce via runners (only by seed) and take roughly 12 to 15 years to mature in the wild, this mezcal represents a finite moment in time. It is a spirit of high personality and intense agave presence, best enjoyed neat to appreciate the subtle interplay between its floral sweetness and its earthy, smoky backbone.

Serving Suggestion:

Sip slowly from a traditional copita alongside a slice of orange and a pinch of sal de gusano to highlight the agave's natural fruitiness.
