The Tropical Pechuga-Style Mezcal Experience: a vibrant and unique expression of Oaxacan mezcal, distilled with mango, courtesy of El Buho Espadín. This artisanal spirit is crafted using the traditional method of adding fruit to the final distillation, similar to the revered Pechuga style (but without the protein), resulting in a spirit that is both rooted in tradition and bursting with tropical flavor.
The Craft:
- Agave: 100% Cultivated Agave Espadín (Agave Angustifolia).
- Process: The agave hearts are roasted in a stone oven and crushed by a horse-drawn tahona. After fermentation, the mezcal is distilled twice. Ripe, peeled mango criollo is then added to the copper still for a third and final distillation. The mango's sugars do not convert to alcohol, but their essence and caramelized flavor profoundly enrich the mezcal.
- ABV: 47% Alc/Vol (94 Proof)
Tasting Notes:
- Color: Crystal clear with medium-sized perlas (bubbles) that indicate high quality and a smooth mouthfeel.
- Aroma: An overwhelming nose of ripe, fresh mango that is clean and bright. Underneath, subtle notes of cooked agave and a hint of lactose (creamy fruit) provide depth.
- Taste: The palate is smooth and vibrant, with the tropical sweetness of mango and green apple taking the lead. The base Espadín mezcal provides a classic profile of roasted agave and a light, balanced smoke that avoids overpowering the fruit.
- Finish: A long, semi-sweet finish that reveals a pleasant warmth of cooked agave and a distinctive, refreshing note of green pepper. This smooth distillate is often described as having the complexity and texture reminiscent of a Pechuga mezcal.
