Don Pilar Ultra Extra Añejo "El Secreto"

A masterclass in patience and traditional craftsmanship. This limited-edition release represents the pinnacle of the Don Pilar line, showcasing the complexity that can only be achieved through extended aging and meticulous barrel selection.

Heritage and Process

The journey begins in the highlands of Jalisco, where estate-grown Blue Weber agave is harvested at peak maturity. After being slow-cooked in traditional autoclaves and fermented with a proprietary champagne yeast, the spirit undergoes a double-distillation process.

What sets "El Secreto" apart is its maturation. This Extra Añejo is aged for over 40 months in specially selected American White Oak barrels. The "secret" lies in the master distiller’s precise blending process, which marries the bold characteristics of the agave with the deep, nuanced influence of the wood.

Tasting Profile

  • Appearance: A deep, brilliant copper with thick, slow-moving legs that signal its rich body.
  • Aroma: An inviting bouquet of toasted oak, cooked agave, and dark chocolate, layered with subtle notes of dried fruit and vanilla bean.
  • Palate: The texture is remarkably silky. Initial flavors of creamy butterscotch and roasted nuts give way to complex spices like cinnamon and clove. The sweetness of the agave remains present, grounding the wood-heavy profile.
  • Finish: Exceptionally long and warm, leaving a lingering trail of caramelized sugar and a touch of smoky tobacco.

Experience

Don Pilar Ultra Extra Añejo is best enjoyed neat in a wide-rimmed snifter or a Riedel tequila glass. Its depth makes it an ideal companion for a celebratory toast or as a sophisticated alternative to a premium cognac or long-aged whiskey. This expression is more than just a spirit; it is a testament to the Doherty family's dedication to producing tequila that honors the land and the time-honored traditions of Arandas.

What is the difference between Tequila & Mezcal?

Tequila is a type of mezcal, much like how scotch and bourbon are types of whiskey.

Tequila and mezcal are both types of agave-based spirits that are popular in Mexico, but there are some key differences between the two. Tequila is made exclusively from the blue agave plant, which is primarily grown in the area surrounding the city of Tequila, about 40 miles northwest of Guadalajara. Mezcal, on the other hand, can be made from any type of agave plant, and is often made using traditional, labor-intensive methods.

One of the most noticeable differences between tequila and mezcal is their flavor. Tequila is typically smooth and subtle, with hints of fruit and spices, while mezcal has a more complex, smoky flavor that comes from the roasting of the agave hearts before they are fermented and distilled.

Another difference between the two spirits is their production process. Tequila is typically made using modern industrial methods, while mezcal is often produced using traditional techniques that have been passed down for generations. This can give mezcal a more authentic, artisanal character.

In general, tequila is considered to be a more refined and sophisticated spirit, while mezcal is often viewed as a more rustic and traditional drink. Both are popular in Mexico and are enjoyed around the world, so the best way to decide which one you like is to try them both and see which one suits your tastes.
