Tres Tiempos: Don Jatt Artisanal Ensamble Agave Spirit - Limited Edition Tobalá Tepezate

Introducing a rare and exceptional release from Tres Tiempos, the Don Jatt Artisanal Ensamble Agave Spirit. This limited edition expression is a masterful blend of two revered wild agaves, Tobalá and Tepezate, meticulously crafted at an altitude of 5,000 feet in the heart of San Luis Amatlán, Oaxaca. Under the expert hand of Master Distiller Diego Lucas Garcia, this spirit embodies the rich traditions of the region, showcasing a complex and harmonious profile.

Tasting Notes:

  • Nose: The initial aroma is a captivating blend of earth and bright fruit. Notes of roasted agave and damp forest floor from the earthen oven are beautifully complemented by a vibrant hint of green bell pepper and sweet, sun-ripened mango. A subtle whisper of smokiness from the copper pot distillation adds depth, promising a layered experience.
  • Palate: The first sip reveals a full-bodied and elegant character. The Tobalá contributes a creamy, mineral-driven texture with flavors of cooked stone fruit, while the Tepezate introduces a lively, herbaceous spiciness and a distinctive, long, vegetal finish. Nuances of white pepper, citrus zest, and a touch of pine resin unfold, creating a dynamic and evolving taste.
  • Finish: The finish is exceptionally long and clean, leaving a lingering warmth on the palate. A delicate balance of sweet agave, a pleasant earthy minerality, and a final flourish of savory spice invites you to savor every moment.

Production Details:

Each batch is a testament to time-honored techniques. The wild-harvested agaves are roasted in a traditional earthen oven, allowing their unique sugars to caramelize slowly. A wooden pallet does the milling, and the distillation process is carried out in small copper pot stills, preserving the nuanced flavors and aromas of this extraordinary ensemble. Bottled at a robust 49.8% ABV, this spirit is a pure and authentic expression of Oaxacan terroir and tradition.

What is the difference between Tequila & Mezcal?

Tequila is a type of mezcal, much like how scotch and bourbon are types of whiskey.

Tequila and mezcal are both types of agave-based spirits that are popular in Mexico, but there are some key differences between the two. Tequila is made exclusively from the blue agave plant, which is primarily grown in the area surrounding the city of Tequila, about 40 miles northwest of Guadalajara. Mezcal, on the other hand, can be made from any type of agave plant, and is often made using traditional, labor-intensive methods.

One of the most noticeable differences between tequila and mezcal is their flavor. Tequila is typically smooth and subtle, with hints of fruit and spices, while mezcal has a more complex, smoky flavor that comes from the roasting of the agave hearts before they are fermented and distilled.

Another difference between the two spirits is their production process. Tequila is typically made using modern industrial methods, while mezcal is often produced using traditional techniques that have been passed down for generations. This can give mezcal a more authentic, artisanal character.

In general, tequila is considered to be a more refined and sophisticated spirit, while mezcal is often viewed as a more rustic and traditional drink. Both are popular in Mexico and are enjoyed around the world, so the best way to decide which one you like is to try them both and see which one suits your tastes.
