Viñas Pijoan DOMENICA BLEND 2020
A Versatile Mexican Red Discover the vibrant character of the Valle de Guadalupe with the Viñas Pijoan Domenica Blend 2020. This ruby-colored red, boasting 13.9% alcohol, is a testament to the harmonious marriage of Grenache, Syrah, and Cariñena, carefully aged for 12 months in second-use French, Hungarian, and American oak barrels. This meticulous aging process imparts subtle complexity while preserving the wine's bright fruit core.
Tasting Notes:
- The Domenica Blend 2020 opens with an inviting bouquet of candied red fruits, most notably strawberries with a creamy sweetness, ripe raspberry, and luscious candied cherries. Elegant notes from its oak aging weave through the fruit, revealing hints of warm cloves, fragrant cinnamon, delicate vanilla, and a touch of rich dark chocolate.
- On the palate, this is a beautifully medium-bodied wine that feels both clean and balanced. The soft and velvety tannins contribute to a smooth texture, leading to a polished and satisfying mouthfeel.
- The vibrant fruit notes from the nose carry through, culminating in a great persistence in the aftertaste, leaving you with lingering impressions of candied red berries and gentle spice.
Food Pairing:
- This Domenica Blend is remarkably versatile at the table. Its profile complements a wide array of cuisines, including spicy dishes, sautéed meats, chicken, duck, or pork served with fruit or light sauces, and even seared tuna.
- It's also a delightful match for hard aged cheeses and pungent blue cheeses.
- Embrace its Mexican heritage by pairing it with Cecina de res, light moles, or the nuanced flavors of chiles rellenos or chiles en nogada.
For optimal enjoyment, serve at a recommended temperature of 18°C (63-64°F).
Wine Profile Highlights:
Crafted with precision, the Grenache, Syrah, and Cariñena varietals were fermented separately in small stainless steel tanks at controlled temperatures, with extended skin contact to extract optimal color and flavor. The expressive Grenache, sourced from a low-yielding vineyard in the sandy-loam soils of the La Grulla Valley, forms the heart of this blend. The Syrah hails from the same esteemed vineyard, contributing its signature spice and structure.

What is the difference between Tequila & Mezcal?
Tequila is a type of mezcal, much like how scotch and bourbon are types of whiskey.
Tequila and mezcal are both types of agave-based spirits that are popular in Mexico, but there are some key differences between the two. Tequila is made exclusively from the blue agave plant, which is primarily grown in the area surrounding the city of Tequila, about 40 miles northwest of Guadalajara. Mezcal, on the other hand, can be made from any type of agave plant, and is often made using traditional, labor-intensive methods.
One of the most noticeable differences between tequila and mezcal is their flavor. Tequila is typically smooth and subtle, with hints of fruit and spices, while mezcal has a more complex, smoky flavor that comes from the roasting of the agave hearts before they are fermented and distilled.
Another difference between the two spirits is their production process. Tequila is typically made using modern industrial methods, while mezcal is often produced using traditional techniques that have been passed down for generations. This can give mezcal a more authentic, artisanal character.
In general, tequila is considered to be a more refined and sophisticated spirit, while mezcal is often viewed as a more rustic and traditional drink. Both are popular in Mexico and are enjoyed around the world, so the best way to decide which one you like is to try them both and see which one suits your tastes.
