Experience the vibrant essence of Chablis with the 2023 vintage from Domaine Orion, a dynamic and exciting estate helmed by the talented Léa Schaller. Léa represents the third generation of her family to farm vines in Préhy. Since taking the reins in 2019, she has dedicated herself to crafting pure, expressive Chablis, moving beyond simply selling grapes to the co-op.

This wine is a testament to her meticulous vineyard practices (herbicides were eliminated in 2022) and thoughtful winemaking, utilizing indigenous yeasts and aging exclusively in stainless steel to preserve the true character of the Kimmeridgian terroir.

Tasting Notes:

  • Appearance: A brilliant, pale gold with a subtle green tint, showcasing its youthful freshness.
  • Aroma: The nose is immediately inviting, bursting with classic Chablis hallmarks. Expect crisp green apple, zesty lemon and lime citrus, and the unmistakable minerality of wet stone and oyster shell. There's a delicate underlying hint of white flowers and a touch of saline freshness that speaks to its Kimmeridgian origins.
  • Flavor: On the palate, the wine is wonderfully precise and invigorating. A vibrant acidity drives a core of lemon curd and green apple, beautifully interwoven with pronounced flinty minerality. It’s lean and focused, yet offers a surprising succulence that balances the characteristic Chablis tension.

What is the difference between Tequila & Mezcal?
