A Ritual of Respect and Tradition Dixeebe (pronounced “dee-sh-bay”) is a powerful Zapotec word, a sacred term of honor, respect, and love. It is spoken to give thanks to the gods, to Mother Earth, and to the people with whom you share the mezcal. This spirit is more than just a drink; it's a veneration of culture and a gift from the gods to be shared with reverence.
Produced by the legendary Maestro Mezcalero Gregorio Hernández in the community of La Compañía, Oaxaca, this limited-release mezcal is a testament to generations of artisanal expertise. The wild Maguey San Martinero (Agave Karwinskii) used in this expression is a tall, slender agave that can take years to mature, absorbing the unique essence of its rugged mountain environment.
Following time-honored traditions, the agaves are cooked in an underground pit oven, milled by a tahona (a traditional stone wheel), and double-distilled in a copper still. The result is a truly exceptional and complex spirit presented in a 375ml bottle, making this premium mezcal more accessible for discovery.
