Derrumbes Guerrero Destilado de Agave

Derrumbes Guerrero offers an extraordinary journey into one of Mexico's most remote and visually stunning agave frontiers. Crafted by maestro vinatero Israel Ríos Bucio in the isolated mountains of Coyuca de Catalán, this ultra-traditional destilado de agave highlights the incredible complexity of the region's most emblematic maguey.

This expression is made entirely from mature, wild Agave cupreata, known locally as penca ancha due to its remarkably wide, tooth-rimmed leaves. The plants are harvested by hand, roasted in an underground conical stone pit oven fueled with white oak, and mechanically shredded. After a completely natural, open-air fermentation using wild ambient yeasts, the spirit undergoes double distillation using an ancestral Filipino-style hybrid still. This distinct apparatus features a hollowed-out higuera blanca (white fig) tree trunk sitting atop a copper pot. Bottled at 44.6% ABV, it is a highly textural, savory, and beautifully funky spirit that prioritizes pure agave character, earth, and umami over simple smoke.

  • Look: Completely clear with luminous, pristine clarity and heavy, slow-moving tears.
  • Aroma: A fascinating and deeply savory bouquet opening with notes of fresh wild lavender, honeysuckle, and rich cooked agave, layered beneath complex hints of damp earth, sea salt, and a mild, creamy funk reminiscent of artisanal cheese.
  • Taste: Round, rich, and wonderfully oily on the palate. Bright flavors of overripe cantaloupe, tangerine, and dark mango integrate seamlessly with notes of rich milk chocolate, hazelnut, and charred nopal.
  • Finish: Long, warming, and decidedly dry, showcasing a beautiful minerality of wet slate, menthol, and a subtle, delicate kiss of oak wood smoke.
