A rare, untamable spirit from the "Wild Boar" agave.

Del Maguey Wild Jabalí is a standout expression in the Vino de Mezcal series, crafted from one of the most challenging agaves in existence: Agave convallis. Known as "Jabalí" (wild boar) due to the serrated, tooth-like spikes on its leaves, this wild maguey is notoriously difficult to process. During fermentation and distillation, the agave naturally produces a high amount of saponins, causing the liquid to foam excessively and testing the mastery of even the most seasoned producers.

This mezcal is born in the high-altitude village of Santa Maria Albarradas (approx. 5,577 feet), where the agaves take 18 to 20 years to reach maturity on craggy, rocky cliffs. Produced by the legendary family of Rogelio Martínez Cruz and Leopoldino Miranda, the process involves roasting the hearts for a full 30 days in earthen pits, horse-milling, and double-distillation in copper pot stills.

Tasting Notes

  • Aroma: A complex and pungent bouquet that blends savory and sweet. Expect prominent notes of fresh figs, baked apple pie, and star anise, uniquely accented by a distinct hint of parmesan rind and earthy tarragon.
  • Palate: The entry is marked by a bright, beautiful acidity. It unfolds with high floral notes of sweet violets and crème de violette, balanced by herbal layers of tarragon and a savory, "spritzy" quality. You may find hints of spice like clove, allspice, and a touch of roasted meat.
  • Finish: Long, clean, and evolving. It leaves a pleasing trail of sandalwood, faint star anise, and a delicate, lingering smoke.

What is the difference between Tequila & Mezcal?
