Del Maguey Ibérico (Ham Pechuga) Mezcal

A Revolutionary Take on a Celebrated Tradition

Experience a groundbreaking evolution of the revered Pechuga mezcal with Del Maguey Ibérico (Ham Pechuga). This innovative expression was born from a serendipitous encounter in Santa Catarina Minas, Oaxaca, between Del Maguey founder Ron Cooper and Chef Ruben García of ThinkFoodGroup. Chef Ruben’s visionary idea—to substitute the traditional chicken or turkey with the exquisite flavors of Ibérico ham—has resulted in a truly extraordinary spirit.

Crafted with the legendary Ibérico de Bellota ham, sourced from free-range, acorn-fed, black-footed pigs in Spain, this mezcal undergoes a unique distillation process. The rich, nuanced flavors of this renowned ham are artfully integrated, creating a Pechuga that is both deeply traditional and daringly new.

Tasting Notes:

  • Nose: A captivating and complex aroma unfolds with spicy, floral notes of carnation, intertwining with tropical aromatics like gardenia and jasmine. Hints of ripe pear, dark fig, wet green hay, and forest floor add layers of intriguing depth.
  • Palate: While not explicitly detailed, the complexity of the nose and finish suggests a harmonious interplay of these unique elements on the palate, likely delivering a savory and nuanced experience.
  • Finish: The journey culminates in a remarkably long finish, revealing flavors of roasted root vegetables and a profound umami. A distinct slate-like minerality and a delicate touch of salinity linger gracefully, leaving a lasting impression of sophisticated savory depth.

Del Maguey Ibérico (Ham Pechuga) Mezcal is a testament to the boundless possibilities of artisanal mezcal, offering a bold and unforgettable sensory experience for the adventurous palate.

What is the difference between Tequila & Mezcal?

Tequila is a type of mezcal, much like how scotch and bourbon are types of whiskey.

Tequila and mezcal are both types of agave-based spirits that are popular in Mexico, but there are some key differences between the two. Tequila is made exclusively from the blue agave plant, which is primarily grown in the area surrounding the city of Tequila, about 40 miles northwest of Guadalajara. Mezcal, on the other hand, can be made from any type of agave plant, and is often made using traditional, labor-intensive methods.

One of the most noticeable differences between tequila and mezcal is their flavor. Tequila is typically smooth and subtle, with hints of fruit and spices, while mezcal has a more complex, smoky flavor that comes from the roasting of the agave hearts before they are fermented and distilled.

Another difference between the two spirits is their production process. Tequila is typically made using modern industrial methods, while mezcal is often produced using traditional techniques that have been passed down for generations. This can give mezcal a more authentic, artisanal character.

In general, tequila is considered to be a more refined and sophisticated spirit, while mezcal is often viewed as a more rustic and traditional drink. Both are popular in Mexico and are enjoyed around the world, so the best way to decide which one you like is to try them both and see which one suits your tastes.
