Crafted by the legendary Maestro Francisco García León in San Guillermo, Miahuatlán, this rare expression showcases the Agave Ramírez, a local, wild-growing Agave sp. that remains one of the more mysterious and sought-after varieties in the Cuish portfolio.
As a "Destilado de Agave," this spirit honors traditional methods that often predate or sit outside official certification, focusing purely on the heritage of the Miahuatlán region.
The Cuish Ramírez is a masterclass in the terroir of Miahuatlán. Francisco García León, a foundational figure of the Cuish collective, uses centuries-old techniques: roasting the wild Ramírez hearts in an underground conical stone oven, milling them with a horse-drawn tahona, and fermenting the mash in open-air Montezuma Cypress vats. The spirit is distilled in a traditional copper still with a refrescadera (a cooling jacket), a signature method of the region that allows for a single distillation to achieve high proof while retaining the intense, volatile aromatics of the wild agave.

The Ramírez agave is known for its distinct "green" and mineral character, offering a profile that sits somewhere between the herbal intensity of a Cuishe and the savory depth of a Tepeztate.
- Aroma: Opens with a striking clarity of wet stone and rain-soaked earth (petrichor). Beneath the minerality, there are high-toned notes of fresh-cut grass, snap peas, and a hint of white pepper.
- Palate: The texture is medium-bodied and silky. It leads with a savory, vegetal sweetness, think cooked agave hearts and roasted bell peppers. As it develops, notes of green olive brine and a subtle, citrusy zest emerge.
- Finish: Long, crisp, and remarkably clean. It leaves a lingering impression of wild herbs (epazote and mint) and a puff of dry, chalky smoke that invites another sip.

Francisco García León is credited with inspiring the Cuish brand itself. After returning to Oaxaca after years away, he found his "rested-in-glass" wild Karwinskii spirits so exceptional that they convinced the founders to launch a mezcaleria dedicated to protecting these wild varieties.
