This agave spirit, Papalometl+ Espadilla, is a product expertly crafted by Maestro Agave Spirits Maker Abdias De La Luz Rodriguez. The suede leather, mint, and walnut aroma develops into a savoriness journey with hints of orange peel, thyme, and sweet cream that invoke a sense of confidence, sophistication, and wonder.

Abdias De La Luz Rodriguez, who hails from Puebla, studied liquid wisdom from his aging father after spending some time as a gardener in the USA. He works with bull hides, a tree trunk still neck, and other techniques his ancestors used to craft this agave spirit in the hills east of Volcano Popocatépetl.

Unlike many other agave spirits makers, Abdias ferments the cooked agave hearts twice in bull hide sacs with potable water. The first time around, he ferments them whole. Then, he and his team rise with the sun and smash the whole fermented hearts by hand with wooden mallets. The crushed agave is then put back in the bull hide sacs for another round of fermentation.
