Caballito Cerrero Azul Puntas: The Essence of the Valley
While many spirits aim for smoothness, Caballito Cerrero Azul Puntas aims for truth. This "Destilado de Agave" is the high-proof "cut" from the very beginning of the distillation process, the Puntas, where the concentration of agave oils and aromatics is at its most potent.
Produced at the historic Santa Rita Fábrica in Amatitán, this expression utilizes the Agave tequilana (Blue Weber) but leaves the restrictive "Tequila" designation behind to preserve the ancestral methods of the Jiménez family.
This is a rare, limited-batch release that captures the untamed spirit of the agave before it is ever diluted.
The Craft
- The Agave: 100% estate-grown Maguey Azul (Agave tequilana). The family waits for "Sazón" maturity, the stage that follows the flower stalk's cutting, to ensure the highest possible concentration of complex sugars.
- The Water: Pure, mineral-rich spring water from the distillery’s own ravine is used for fermentation and distillation, imparting a unique local fingerprint.
- The Puntas Cut: By bottling the "heads" of the distillation, the family preserves a silky, viscous texture and a depth of flavor that is often lost in standard 40% ABV bottlings.
Tasting Notes
- ABV: Typically 63% – 68% (High Proof / Still Strength)
- Aroma: A vivid and electrifying nose. It leads with a massive wave of sweet, caramelized agave and bright lime zest. As it sits, it reveals sophisticated layers of green olive brine, white pepper, and a distinctive "wet cement" minerality that speaks to the Amatitán soil.
- Palate: Intense and creamy. The high proof carries a surprising sweetness, reminiscent of honey and roasted yams. This is followed by a burst of herbal complexity, mint, rosemary, and anise, balanced by a sharp, clean salinity.
- Finish: Exhilarating and persistent. The finish is exceptionally long, moving from a spicy tingle to a soft, lingering sweetness of cooked agave and peppermint.

Caballito Cerrero Azul Puntas is a masterclass in what Blue Weber agave can achieve when left in its most raw, powerful state. It is an "unplugged" version of a valley spirit—vibrant, oily, and uncompromising.
Serving Suggestion:
Given its formidable proof, we recommend sipping this slowly in a Glencairn or copita glass. A small splash of water can be added to "bloom" the spirit, revealing hidden floral notes of orange blossom and jasmine that are otherwise tucked behind the high-proof heat.
