Banhez Jabalí Mezcal Banhez Jabalí is a standout expression from the Banhez Mezcal Artesanal Cooperative, a collective of over 35 families in the Ejutla district of Oaxaca. This mezcal is crafted using 100% wild-harvested Jabalí agave (Agave convallis), a species famously difficult to master. Because Jabalí expands and foams during fermentation, it requires the steady hand of a master distiller like Jose Espinosa to produce a spirit of this caliber.
The name "Jabalí" refers to the wild boar, a nod to the agave’s rugged, spiny leaves and its untamed nature. This is a mezcal for those who appreciate rare, single-varietal expressions that lean away from simple smoke and toward a vibrant, sophisticated complexity.
Tasting Notes
- Aroma: Intense and herbaceous. You'll find notes of wet stone, fresh conifers, and a distinct mineral quality, balanced by a light, lactic sweetness.
- Palate: Citric and light-bodied with a "lively" mouthfeel. It features a fascinating blend of fermented fruit (think tart peach or apple) and wild green herbs.
- Finish: The finish is long and crisp, leaving a lingering herbaceousness and a touch of spice without being overwhelmed by heavy smoke.

What is the difference between Tequila & Mezcal?
