Convite Coyote: The Spirit of the Wild
Convite Coyote is an exceptional, limited-production mezcal crafted from the rare and elusive Agave Americana var. Oaxacensis, commonly known as Coyote. This wild agave is a genetic cousin to the Arroqueño and grows sporadically in the rugged, high-altitude terrain of San Baltazar Guelavila, Oaxaca.
Produced by the Mateo Family, fifth-generation mezcaleros, Convite focuses on the "farm-to-bottle" philosophy. Their Coyote expression is prized for its high sugar content and deep complexity, offering a profile that is notably richer and more "darkly" flavored than the more common Espadín.
Tasting Notes
- Aroma: Deeply earthy and enticing. You will find layers of roasted cocoa, wet clay, and a subtle hint of dried dark fruits like figs or prunes.
- Palate: Robust and velvety. It leads with a savory, nutty richness followed by notes of black pepper, cooked agave sweetness, and a touch of leather.
- Finish: Long, warming, and sophisticated. The smoke is well-integrated, giving way to a mineral-driven dry finish with a faint trace of anise.

What is the difference between Tequila & Mezcal?
