Chacolo Presa Grande is a masterclass in patience and traditional Jalisco craftsmanship. Produced by the Partida family—who have spent five generations perfecting their craft—this expression showcases the maguey Presa Grande, a specific subspecies of Agave angustifolia. What sets this spirit apart is the extraordinary 13-year lifecycle of the plant: 10 years to reach maturity, followed by an additional 3 years of "capón" (the practice of cutting the flowering stalk to allow the sugars and essential oils to concentrate back into the heart of the agave). This rare, labor-intensive process results in a spirit of unparalleled depth and complexity.
The Process Agave:
100% Maguey Presa Grande (Agave angustifolia).
- Capón: 3 years for maximum sugar concentration.
- Milling: Laboriously hand-chopped with axes, preserving the integrity of the fibers.
- Fermentation: Natural airborne yeast in wooden tinas using local mountain spring water.
- Distillation: Double distilled in a traditional Filipino-style still, featuring wood and copper components that impart a rustic, ancestral character.
Tasting Notes
- Appearance: Crystal clear with high viscosity, leaving long, slow tears on the glass.
- Aroma: The nose opens with a sophisticated balance of damp earth and roasted agave sweetness. Underlying notes of pine resin and wildflower honey are complemented by a distinct mineral streak reminiscent of wet river stones.
- Palate: The texture is rich and oily, coating the mouth immediately. Initial flavors of caramelized tropical fruit (think grilled pineapple) transition into savory herbaceousness. Because of the long capón period, there is a profound "cooked" depth—savory notes of roasted nuts and a faint, elegant puff of woodsmoke.
