This spirit is a masterful blend of two distinct agave varieties:
- Maguey Brocha (Agave Angustifolia, related to Espadín)
- Maguey Ixtero Amarillo (Agave Rhodacantha, related to Mexicano)
Artisanal Production
Every step in the creation of this destilado honors tradition: The agave are cooked slowly in a traditional underground oven, imparting deep, earthy sweetness. The cooked agave is hand-milled with axes, a labor-intensive process that preserves the fiber structure and texture of the mash. Fermentation occurs naturally in wooden tinas, utilizing wild yeast and pure mountain spring water to develop complex, mineral-driven flavors. The spirit is double distilled in a unique Filipino-style still, lending a distinct character and smooth finish.

This rare blend of Angustifolia and Rhodacantha offers a complex and captivating profile:
- Aroma: A beautiful convergence of sweet cooked agave, brightened by notes of citrus zest (lemon, grapefruit pith) and fresh-cut grass. Underlying aromas of wet slate and light smoke from the earth oven provide depth.
- Palate: The initial taste is rich and enveloping, featuring flavors of caramelized pineapple and nutmeg from the cooked Brocha agave.
