This destilado de agave is a singular spirit crafted exclusively from the Maguey Brocha (Agave Angustifolia), a prized varietal related to the familiar Espadín.
A Dedication to Maturation
This spirit's depth of flavor begins in the field:
- The Maguey Brocha is allowed to mature for approximately 7 years.
- It then undergoes an additional 3 years of capón (cutting the quiote or flower stalk), concentrating the sugars and enriching the agave's natural flavor profile.
Ancestral Production
Chacolo Brocha is a tribute to time-honored techniques from Zapotitlan de Vadillo:
- The carefully harvested agave hearts are cooked in a traditional underground oven, imbuing them with deep, smoky sweetness.
- The cooked agave is hand-milled with axes, a highly labor-intensive method that ensures the natural character and texture of the fibers remain intact. Fermentation occurs naturally in wooden tinas, harnessing the environment's native yeast and pure mountain spring water for a unique, terroir-driven character.
- The final spirit is meticulously double distilled in a Filipino-style still, producing a smooth, aromatic, and distinctively elegant result.
Tasting Notes
The extended maturation and capón process delivers a concentrated and balanced flavor profile:
- Aroma: Highly aromatic with a pronounced core of cooked agave sweetness, complimented by bright notes of white flowers, a hint of green bell pepper, and a subtle earthy minerality (wet clay).
- Palate: Clean, vibrant, and agave-forward. It delivers flavors of honeycomb, roasted sweet potato, and a dusting of cinnamon. The Angustifolia nature provides a delightful balance of sweetness and a characteristic peppery spice on the mid-palate, giving it a lively texture.
- Finish: Medium-long and refreshing. It concludes with a satisfying, clean dryness, leaving traces of almond and a gentle, lingering warmth.
