Chacolo Azul Telcruz (Angustifolia) 3 Años Capón is a rare and profound expression of the Azul Telcruz agave, a regional subspecies of Agave angustifolia (the same family as Espadín).1 Produced by the Partida family in the rugged terrain of Zapotitlán de Vadillo, Jalisco, this spirit represents one of the most singular profiles in the agave world—a perfect marriage of high sugar concentration and ancestral technique.2The Craft: The Ancient "Azul" of JaliscoWhile the name "Azul" might bring Tequila to mind, Azul Telcruz is a distinct, local variety that takes roughly 10 years to reach maturity.3 To create this "Capón" edition, Don Macario Partida cuts the flowering stalk (quiote) and leaves the agave in the soil for an additional 3 years.4 This period of "castration" forces the plant to pull all its energy and nutrients back into the heart, resulting in a spirit that is exceptionally dense, sweet, and structurally complex.5Tasting NotesAroma: Highly idiosyncratic and "high-toned."6 It opens with an intriguing mix of mint, fresh citrus oils, and vanilla frosting.
