Chacolo, 3 Años Capón A. Angustifolia Lineno Vol. 5 Destilado 100% De Agave

A rare and exquisite expression of traditional agave spirit, the Chacolo 3 Años Capón A. Angustifolia Lineno Vol. 5 offers a profound journey into the heart of Jalisco's ancestral distillation. Crafted by the renowned Partida family, who boast five generations of expertise in Zapotitlán de Vadillo, this "Destilado de Agave" stands as a testament to their unwavering commitment to heritage and quality.

This exceptional release is made from 100% Agave Lineño (a subspecies of Angustifolia), meticulously cultivated and then "capón" for three years. The "capón" process, where the agave's quiote (flowering stalk) is removed, concentrates the plant's sugars and deepens its flavor profile, resulting in a spirit of remarkable complexity and depth. The agaves are cooked in traditional underground ovens, hand-milled with axes, and naturally fermented with mountain spring water in wooden vats before being double-distilled in unique Filipino-style stills. Each small batch, like this rare Vol. 5 (often around 62 liters), is a labor of love, embodying generations of knowledge and respect for the land.

Tasting Notes:

  • Color: Crystal clear and luminous, showcasing its unadulterated purity.
  • Nose: A captivating and evolving aroma unfolds. Initial notes of bright, juicy citrus (especially lemon and lime) are followed by delicate floral and minty undertones. As it opens up, hints of vanilla, caramel, and even a touch of white chocolate and honey emerge, creating a surprisingly sweet and inviting bouquet. A subtle minerality and a whisper of wet earth provide a grounding contrast. Some may even detect a faint, intriguing "scotch-y vibe" or hints of chocolate-covered strawberries.
  • Palate: The palate is a symphony of complex flavors. Vibrant lemon and orange citrus lead the way, beautifully interwoven with fresh mint, creamy vanilla, and a touch of yogurt or cantaloupe. There's a subtle sweetness reminiscent of lemon meringue pie or candied notes like fresh maple syrup and gooey caramel, balanced by a distinct, pleasant acidity. Earthy and mineral notes provide depth, with a delicate smokiness and perhaps a hint of ash on the mid-palate. It possesses a remarkable silkiness and richness, with a distinct absence of harshness.
  • Finish: Long, incredibly smooth, and remarkably clean. The citrus and mint notes gently linger, evolving into subtle herbal and grassy undertones. The minerality persists, leaving a refreshing and slightly dry, perfumed sensation that invites contemplation and another sip.

The Chacolo 3 Años Capón A. Angustifolia Lineno Vol. 5 is a true connoisseur's spirit, best savored neat to appreciate its intricate layers and profound character. It's a testament to the artistry of traditional agave distillation and a must-try for those seeking a truly unique and memorable experience.

What is the difference between Tequila & Mezcal?

Tequila is a type of mezcal, much like how scotch and bourbon are types of whiskey.

Tequila and mezcal are both types of agave-based spirits that are popular in Mexico, but there are some key differences between the two. Tequila is made exclusively from the blue agave plant, which is primarily grown in the area surrounding the city of Tequila, about 40 miles northwest of Guadalajara. Mezcal, on the other hand, can be made from any type of agave plant, and is often made using traditional, labor-intensive methods.

One of the most noticeable differences between tequila and mezcal is their flavor. Tequila is typically smooth and subtle, with hints of fruit and spices, while mezcal has a more complex, smoky flavor that comes from the roasting of the agave hearts before they are fermented and distilled.

Another difference between the two spirits is their production process. Tequila is typically made using modern industrial methods, while mezcal is often produced using traditional techniques that have been passed down for generations. This can give mezcal a more authentic, artisanal character.

In general, tequila is considered to be a more refined and sophisticated spirit, while mezcal is often viewed as a more rustic and traditional drink. Both are popular in Mexico and are enjoyed around the world, so the best way to decide which one you like is to try them both and see which one suits your tastes.
