The name "Verde-Quiotero" refers to a specific, traditional practice: the quiote (the agave's flowering stalk) is cut months before harvest. This allows the plant's sugars to concentrate fully in the heart (piña), resulting in a profile of remarkable depth. Distilled in a "Mongolian-style" internal clay pot still—locally known as a Campanilla for its bell-like shape—this spirit captures a delicate complexity that standard industrial methods simply cannot replicate.
