Agave Selection:
The Navarro family carefully harvests four varieties of locally grown Agave Salmiana:
- Verde (featured in this bottle)
- Chino
- Cuerno
- Blanco
Traditional Production Methods:
- Roasting: Agaves are cooked in an above-ground stone oven, imparting a subtle smokiness.
- Mashing: Cooked agave is hand-mashed, preserving its delicate flavors.
- Fermentation: A blend of agave juice, fibers, ambient yeasts, and pulque creates a uniquely complex mash.
The "Mongolian" Still:

However, due to the challenges of maintaining consistent temperature during shipping, we exclusively offer in-store pickup for our craft beers.
