Cambio Tequila Blanco
Cambio Tequila Blanco is a masterclass in highland terroir. Crafted at the celebrated El Pandillo distillery, this expression is a high-fidelity capture of the agave plant in its most honest form. By honoring the traditional tahona process and leveraging the precision of modern, sustainable engineering, master distiller Felipe Camarena has created a spirit that feels both ancient and remarkably refined.
The production journey begins with agave grown at high altitudes, where the cooler temperatures and mineral-dense soil foster a slow, complex maturation process. Once harvested, the agave hearts are cooked in custom ovens designed to ensure uniform heat distribution, then crushed by a volcanic stone wheel. This method preserves the rich fibers and the subtle, earthy oils that characterize the finest highland spirits. The result is a vibrant, clean, and profoundly expressive tequila.
Tasting Notes
- Aroma: The initial impression is bright and floral, dominated by fresh, roasted agave. As it opens, notes of crushed mint, citrus zest, and a distinct petrichor or rain-on-hot-stone mineral quality emerge, showcasing the unique atmosphere of the Jalisco highlands.
- Palate: The texture is remarkably silky and viscous. On the tongue, it delivers a punch of sweet, cooked agave balanced by refreshing vegetal notes of bell pepper and green apple. A faint touch of salinity and black pepper provides a sophisticated counterpoint to the natural sweetness.
- Finish: Crisp, persistent, and clean. It leaves behind a lingering, pleasant warmth with a final, elegant note of herbal complexity that reminds the drinker of the raw, wild beauty of the agave field.
This is a tequila for purists. It is best enjoyed neat or over a single large ice cube, allowing its nuanced layers to unfold gradually. For the cocktail enthusiast, it serves as an unparalleled foundation for a high-end Margarita or a refined Paloma, elevating the drink with its deep mineral character and impeccable balance.

What is the difference between Tequila & Mezcal?
Tequila is a type of mezcal, much like how scotch and bourbon are types of whiskey.
Tequila and mezcal are both types of agave-based spirits that are popular in Mexico, but there are some key differences between the two. Tequila is made exclusively from the blue agave plant, which is primarily grown in the area surrounding the city of Tequila, about 40 miles northwest of Guadalajara. Mezcal, on the other hand, can be made from any type of agave plant, and is often made using traditional, labor-intensive methods.
One of the most noticeable differences between tequila and mezcal is their flavor. Tequila is typically smooth and subtle, with hints of fruit and spices, while mezcal has a more complex, smoky flavor that comes from the roasting of the agave hearts before they are fermented and distilled.
Another difference between the two spirits is their production process. Tequila is typically made using modern industrial methods, while mezcal is often produced using traditional techniques that have been passed down for generations. This can give mezcal a more authentic, artisanal character.
In general, tequila is considered to be a more refined and sophisticated spirit, while mezcal is often viewed as a more rustic and traditional drink. Both are popular in Mexico and are enjoyed around the world, so the best way to decide which one you like is to try them both and see which one suits your tastes.
