Calavé Blanco: The Pure Expression of California
Calavé Blanco is the foundation of our craft, offering a transparent window into the unique terroir of the West Coast. Distilled from 100% California-grown agave, this spirit skips the barrel to bring you the raw, vibrant energy of the plant. It is a testament to what happens when traditional Mexican craftsmanship meets the mineral-rich soils of the California landscape.
Tasting Notes
- Aroma: Opens with a bright, crisp burst of fresh rain on warm earth and lime zest. Subtle floral undertones of white pepper and green apple provide a clean, invigorating nose.
- Palate: A silky, light-to-medium body that leads with the natural sweetness of slow-cooked agave. Distinctive mineral notes, reminiscent of the California coast, are balanced by flavors of lemongrass, grapefruit pith, and a hint of herbal savory-ness.
- Finish: Exceptionally clean and dry. A gentle, peppery heat lingers briefly, leaving behind a refreshing trail of citrus and sweet vegetal notes.
The Calavé Standard
100% California Grown: Our agave is harvested at peak maturity from local fields, ensuring a flavor profile that is distinctively Californian.
- Additive-Free: We use zero diffusers, coloring, or flavoring agents. The complexity you taste is derived solely from water, yeast, and premium agave.
- Traditional Craft: Produced in small batches using time-honored distillation methods to preserve the delicate aromatic compounds often lost in mass production.
- Domestic Excellence: Every drop is grown and distilled in the U.S.A., pushing the boundaries of what domestic spirits can achieve.
How to Enjoy Calavé
Blanco is a purist’s spirit. It is best enjoyed neat or in a traditional Copita to experience its full botanical profile. For those who prefer a cocktail, it provides a crisp, punchy backbone to a classic Margarita or a sophisticated Agave Gin & Tonic.
Calavé Blanco: Unfiltered. Uncompromised. Unmistakably California.

What is the difference between Tequila & Mezcal?
Tequila is a type of mezcal, much like how scotch and bourbon are types of whiskey.
Tequila and mezcal are both types of agave-based spirits that are popular in Mexico, but there are some key differences between the two. Tequila is made exclusively from the blue agave plant, which is primarily grown in the area surrounding the city of Tequila, about 40 miles northwest of Guadalajara. Mezcal, on the other hand, can be made from any type of agave plant, and is often made using traditional, labor-intensive methods.
One of the most noticeable differences between tequila and mezcal is their flavor. Tequila is typically smooth and subtle, with hints of fruit and spices, while mezcal has a more complex, smoky flavor that comes from the roasting of the agave hearts before they are fermented and distilled.
Another difference between the two spirits is their production process. Tequila is typically made using modern industrial methods, while mezcal is often produced using traditional techniques that have been passed down for generations. This can give mezcal a more authentic, artisanal character.
In general, tequila is considered to be a more refined and sophisticated spirit, while mezcal is often viewed as a more rustic and traditional drink. Both are popular in Mexico and are enjoyed around the world, so the best way to decide which one you like is to try them both and see which one suits your tastes.
