Crafted by the legendary Jiménez family in Jalisco, Caballito Cerrero's spirits represent a return to the roots of agave distillation, embodying a rebellious spirit that "bucks the system." Because of their commitment to traditional, time-honored methods that go beyond the modern regulations of the CRT (Consejo Regulador del Tequila), these spirits are labeled as "Destilado de Agave," not tequila, making them a must-have for any serious agave aficionado.
This Ensamble blends two distinct agave varieties—the classic Blue Weber (Azul) and the rarer, estate-grown Angustifolia (Chato)—to create a complex and captivating expression.
Tasting Notes:
- Aroma: The nose is an intriguing and lively bouquet. Notes of sweet, cooked agave jump out, mingling with earthy and mineral tones. Herbal and grassy aromas are present, accented by a subtle, funky quality. You may also detect hints of tropical fruit like pineapple and jackfruit, along with a whisper of anise and dill pickle.
