Cabal Cabalgadura Mezcal Salmiana is a profound exploration of the arid landscapes of San Luis Potosí, where the majestic Agave Salmiana, often called the "Green Giant," reaches maturity only after 14 patient years. This expression is a bridge between two centuries of history and modern artisanal precision.
The production is a testament to slow craftsmanship. The agaves are steamed for 7 days in a 200-year-old brick-and-stone oven. In a rare traditional technique, the plants absorb the essence of steam through Sabine wood floors, layering the spirit with a character that cannot be replicated in modern autoclaves. The extraction is equally unique, utilizing a Roman concrete double tahona followed by a single stone tahona for fine-tuning. Fermentation occurs naturally in open-air vats, sparked by the addition of pulque from the same Salmiana agave, ensuring the biological integrity of the plant is preserved from field to flask.
Tasting Notes
- Aroma: A bright and remarkably vegetal nose. It opens with the punch of green bell pepper and crisp, fresh-cut grass, followed by the high-toned brightness of lemon peel and a hint of mineral-rich soil.
- Palate: The first sip is refreshing and complex. A creamy mouthfeel carries savory notes of briney olives and the garden-fresh snap of Serrano pepper. It is exceptionally clean, focusing on the green, botanical side of the agave rather than heavy smoke.
- Finish: A long, lingering finish that leaves the palate zesty and energized. Notes of lemon zest dominate the end, accompanied by the subtle, warming heat of roasted green poblano pepper.
