Billecart-Salmon Le Blanc de Blancs Grand Cru NV

A signature of the House, the Billecart-Salmon Le Blanc de Blancs Grand Cru is a tribute to the elegance and purity of Chardonnay. Sourced exclusively from the most prestigious vineyards of the Côte des Blancs, specifically the Grand Cru villages of Cramant, Chouilly, Avize, and Mesnil-sur-Oger, this cuvée is a masterclass in precision and finesse.

Through a blend of two different vintages and the House’s signature cold-fermentation process, this Champagne achieves a remarkable balance between youthful tension and sophisticated maturity. It is a crystalline expression of chalky soils and world-class viticulture.

Product Highlights

  • Varietal: 100% Chardonnay (Blanc de Blancs)
  • Classification: Grand Cru
  • Terroir: Côte des Blancs (Cramant, Chouilly, Avize, Mesnil-sur-Oger)
  • Dosage: Low (approx. 7g/L to 8g/L) for a crisp, dry profile
  • Aging: Extended lees aging for added complexity and a fine, persistent mousse.

Tasting Notes

  • Appearance: In the glass, the wine displays a pale gold hue with shimmering green reflections, typical of great Chardonnay. The bubbles are remarkably fine, rising in delicate, persistent chains to form a creamy mousse collar.
  • Aroma: The nose is an elegance invitation. It opens with bright citrus zest, white flowers (hawthorn and honeysuckle), and fresh Granny Smith apple. As it breathes, more complex "autolytic" notes emerge—think warm brioche, fresh butter, and a distinct chalky minerality that speaks directly to its Grand Cru origins.
  • Palate: Entry is sharp and pure. There is a beautiful tension between the vibrant acidity and the creamy texture of the bubbles. A powerful mineral backbone underpins flavors of lemon curd, white peach, and blanched almonds. The mouthfeel is airy yet structured, showing great intensity without weight.
  • Finish: The finish is exceptionally clean and long, marked by a refreshing salinity and a touch of dry ginger. It leaves the palate invigorated, with a lingering echo of citrus peel and toasted hazelnuts.

Food Pairing Recommendations

This is a versatile masterpiece. It excels as an aperitif, but its structural integrity allows it to pair beautifully with Oysters Rockefeller, sea bass carpaccio, or creamy risotto with white truffles. Its minerality makes it a perfect foil for the richness of caviar or aged Comté cheese.

What is the difference between Tequila & Mezcal?

Tequila is a type of mezcal, much like how scotch and bourbon are types of whiskey.

Tequila and mezcal are both types of agave-based spirits that are popular in Mexico, but there are some key differences between the two. Tequila is made exclusively from the blue agave plant, which is primarily grown in the area surrounding the city of Tequila, about 40 miles northwest of Guadalajara. Mezcal, on the other hand, can be made from any type of agave plant, and is often made using traditional, labor-intensive methods.

One of the most noticeable differences between tequila and mezcal is their flavor. Tequila is typically smooth and subtle, with hints of fruit and spices, while mezcal has a more complex, smoky flavor that comes from the roasting of the agave hearts before they are fermented and distilled.

Another difference between the two spirits is their production process. Tequila is typically made using modern industrial methods, while mezcal is often produced using traditional techniques that have been passed down for generations. This can give mezcal a more authentic, artisanal character.

In general, tequila is considered to be a more refined and sophisticated spirit, while mezcal is often viewed as a more rustic and traditional drink. Both are popular in Mexico and are enjoyed around the world, so the best way to decide which one you like is to try them both and see which one suits your tastes.
