Amateco Ensamble: A Journey Through Oaxacan Tradition

Discover the soul of Oaxaca in every sip with Amateco Ensamble, a meticulous blend of two revered agave varietals: Tobasiche and Madrecuixe. Hand-harvested from the rugged hillsides of the Sierra Madre del Sur, these slow-growing agaves, known for their unique flavor profiles, are roasted in traditional earth ovens for up to five days, releasing their natural sweetness and complex earthy notes. Following traditional crushing and natural fermentation, the agave juice is twice-distilled in copper pot stills, meticulously separating the heart of the distillate to create a spirit of exceptional purity and character.

Tasting Notes:

  • Aroma: A complex and inviting bouquet, starting with delicate floral and citrus notes that give way to deeper, earthy undertones of wet stone and roasted agave. A touch of smoke lingers in the background, adding intrigue and depth.
  • Palate: A velvety smooth and vibrant palate, offering a symphony of flavors that dance on the tongue. Sweet, caramel-like notes of roasted agave are balanced by herbaceous hints of mint and thyme, while a touch of salinity adds complexity and freshness. The Tobasiche brings structure and earthy depth, while the Madrecuixe contributes floral elegance and mineral nuances.
  • Finish: Long and lingering, with a persistent finish that showcases the complex character of the agave. Delicate smoke and mineral notes linger on the palate, leaving you wanting more.

Serving Suggestions:

  • Neat: Sip Amateco Ensamble neat to fully appreciate its complex flavors and aromas. Serve at room temperature or slightly chilled in a traditional copita glass.
  • On the Rocks: Enjoy on the rocks for a refreshing twist. The slowly melting ice will open up the spirit, revealing new layers of flavor and aroma.
  • In Cocktails: Amateco Ensamble adds depth and character to classic cocktails like the Paloma and the Mezcal Negroni. Experiment with different recipes and discover new ways to enjoy this exceptional spirit.

More than just a spirit, Amateco Ensamble is a testament to the dedication and artistry of Oaxacan mezcaleros. Savor the rich heritage and vibrant culture of Oaxaca with every sip.

What is the difference between Tequila & Mezcal?

Tequila is a type of mezcal, much like how scotch and bourbon are types of whiskey.

Tequila and mezcal are both types of agave-based spirits that are popular in Mexico, but there are some key differences between the two. Tequila is made exclusively from the blue agave plant, which is primarily grown in the area surrounding the city of Tequila, about 40 miles northwest of Guadalajara. Mezcal, on the other hand, can be made from any type of agave plant, and is often made using traditional, labor-intensive methods.

One of the most noticeable differences between tequila and mezcal is their flavor. Tequila is typically smooth and subtle, with hints of fruit and spices, while mezcal has a more complex, smoky flavor that comes from the roasting of the agave hearts before they are fermented and distilled.

Another difference between the two spirits is their production process. Tequila is typically made using modern industrial methods, while mezcal is often produced using traditional techniques that have been passed down for generations. This can give mezcal a more authentic, artisanal character.

In general, tequila is considered to be a more refined and sophisticated spirit, while mezcal is often viewed as a more rustic and traditional drink. Both are popular in Mexico and are enjoyed around the world, so the best way to decide which one you like is to try them both and see which one suits your tastes.
