Alma Finca Orange Liqueur
Origin: Yucatán Peninsula, Mexico | ABV: 40%
The Soul of the Yucatán Alma Finca (literally "Soul of the Estate") is the first premium orange liqueur created specifically to capture the lush, tropical terroir of Mexico’s Yucatán Peninsula. Crafted by Master Distiller Iván Saldaña and Casa Lumbre, this "farm-to-bottle" spirit moves beyond the one-dimensional sweetness of traditional triple secs. It offers a complex, aromatic journey that blends fresh citrus with the exotic spices of the Mayan region, making it the definitive Mexican standard for an authentic Margarita.
Production & Craft
Unlike competitors that rely on dried peels or artificial essences, Alma Finca is produced using 100% fresh, seasonal ingredients harvested between October and December.
- The Blend: A maceration of fresh sweet and bitter orange peels, Persian lime leaves, and citrus blossoms.
- The Spice: Subtly infused with local spices (often including hints of allspice and achiote) to provide depth.
- The Process: Each ingredient is macerated individually for five days in neutral cane spirit before blending, ensuring the true essence of the raw material is preserved without additives or flavorings.
Tasting Notes
- Appearance Crystal clear and brilliant with a medium viscosity that clings gently to the glass.
- Nose The aroma is intensely fresh and verdant. It opens with bright, zesty waves of sweet orange flesh and neroli (orange blossom), followed immediately by a green, herbal note reminiscent of linden tea and crushed lime leaves. There is a subtle underlying warmth of toasted sugar and soft baking spice that grounds the high citrus notes.
- Palate A lively, oily texture that coats the mouth with a "dry-yet-fruity" balance. The initial attack is ripe mandarin and orange candy, which quickly gives way to more complex layers of Persian lime zest and burnt sugar. The sweetness is restrained, allowing the savory, floral character of the citrus blossoms and a pinch of salinity to shine through.
- Finish Long, snappy, and refreshing. The finish moves away from sugar into a clean, peppery bite with lingering notes of bittersweet grapefruit and a whisper of tropical spice.
Serving Suggestions
- The Authentic Margarita: The ideal partner for blanco tequila. Its floral and spicy notes bridge the gap between the agave's earthiness and the lime's acidity. Ratio: 2 oz Tequila Blanco + 1 oz Alma Finca + 1 oz Fresh Lime Juice.
- Alma & Soda: Serve 1.5 oz of Alma Finca over ice, topped with premium soda water and a slice of orange for a low-ABV highball that tastes like sunshine.
- Neat or on the Rocks: Complex enough to be sipped as a digestif, similar to a fine curaçao.

What is the difference between Tequila & Mezcal?
Tequila is a type of mezcal, much like how scotch and bourbon are types of whiskey.
Tequila and mezcal are both types of agave-based spirits that are popular in Mexico, but there are some key differences between the two. Tequila is made exclusively from the blue agave plant, which is primarily grown in the area surrounding the city of Tequila, about 40 miles northwest of Guadalajara. Mezcal, on the other hand, can be made from any type of agave plant, and is often made using traditional, labor-intensive methods.
One of the most noticeable differences between tequila and mezcal is their flavor. Tequila is typically smooth and subtle, with hints of fruit and spices, while mezcal has a more complex, smoky flavor that comes from the roasting of the agave hearts before they are fermented and distilled.
Another difference between the two spirits is their production process. Tequila is typically made using modern industrial methods, while mezcal is often produced using traditional techniques that have been passed down for generations. This can give mezcal a more authentic, artisanal character.
In general, tequila is considered to be a more refined and sophisticated spirit, while mezcal is often viewed as a more rustic and traditional drink. Both are popular in Mexico and are enjoyed around the world, so the best way to decide which one you like is to try them both and see which one suits your tastes.
