Organic Java sugarcane is hand-harvested from steep hillside plots reaching up to 1,200 meters. The fresh-pressed cane juice undergoes spontaneous fermentation in wooden pine vats using ambient yeasts, followed by a slow, double distillation in tiny 250-liter copper pot alembics that yield just five liters per hour. Bottled completely unfiltered at a potent 71.1% ABV, this additive-free rum preserves every congener and volatile lipid for maximum character.
