Abasolo Mexican Corn Whiskey

Ancestral Grains, Modern Spirit

Discover the true essence of Mexican corn with Abasolo Mexican Corn Whiskey, a groundbreaking spirit that redefines the category of whiskey. Crafted entirely from 100% Cacahuazintle corn – a unique, non-GMO heirloom variety cultivated for generations in the high valleys of Mexico – Abasolo is the first whisky ever made from this ancient grain.

Utilizing a proprietary process called "Nixtamalization," an 8,000-year-old culinary technique used to unlock the corn's full flavor and nutritional potential, this whiskey delivers a depth of flavor unlike anything you've experienced before. Abasolo is a celebration of heritage, innovation, and the rich agricultural bounty of Mexico.

Tasting Notes:

  • Nose: The aroma is immediately inviting and distinctively "corn." Sweet, toasted notes of freshly baked cornbread and roasted kernels mingle with hints of vanilla, caramel, and a subtle nuttiness, reminiscent of roasted peanuts or pecans. Underlying tones of honey and a light, earthy minerality add complexity, showcasing the unique character of the Cacahuazintle corn.
  • Palate: On the palate, Abasolo is remarkably smooth and surprisingly complex. The initial taste delivers a delightful sweetness of roasted corn, quickly followed by layers of warm, rich flavors, such as toasted bread, dark chocolate, and a delicate coffee bean note. There's a creamy, almost buttery mouthfeel, beautifully balanced by a subtle spiciness and a gentle herbaceous quality that speaks to the nixtamalization process. It avoids any harshness, offering a remarkably soft and approachable profile.
  • Finish: The finish is medium to long, clean, and incredibly satisfying. The roasted corn sweetness lingers, slowly fading into pleasant notes of dark caramel and a touch of oak. It leaves a warm, comforting impression, with a unique, earthy undertone that invites further contemplation. The lack of traditional "burn" allows the intricate flavors to shine through to the very end.

Abasolo Mexican Corn Whiskey is a versatile spirit, perfect for sipping neat or on the rocks, allowing you to appreciate its nuanced profile fully. It also shines in classic whiskey cocktails, adding a unique depth and a touch of Mexican heritage to every sip. Experience the spirit of Mexico's ancestral grain.

What is the difference between Tequila & Mezcal?

Tequila is a type of mezcal, much like how scotch and bourbon are types of whiskey.

Tequila and mezcal are both types of agave-based spirits that are popular in Mexico, but there are some key differences between the two. Tequila is made exclusively from the blue agave plant, which is primarily grown in the area surrounding the city of Tequila, about 40 miles northwest of Guadalajara. Mezcal, on the other hand, can be made from any type of agave plant, and is often made using traditional, labor-intensive methods.

One of the most noticeable differences between tequila and mezcal is their flavor. Tequila is typically smooth and subtle, with hints of fruit and spices, while mezcal has a more complex, smoky flavor that comes from the roasting of the agave hearts before they are fermented and distilled.

Another difference between the two spirits is their production process. Tequila is typically made using modern industrial methods, while mezcal is often produced using traditional techniques that have been passed down for generations. This can give mezcal a more authentic, artisanal character.

In general, tequila is considered to be a more refined and sophisticated spirit, while mezcal is often viewed as a more rustic and traditional drink. Both are popular in Mexico and are enjoyed around the world, so the best way to decide which one you like is to try them both and see which one suits your tastes.
