5 Sentidos Pizorra Agave Spirit 750ml - a unique mezcal part of "La Colección Mixteca," a collection of small-batch agave spirits crafted in the mountainous Mixteca region of Oaxaca and Puebla. Maestro mezcalero Delfino Tobón Mejia crafts this mezcal using wild maguey Pizorra (A. Marmorata), found in the clay mountains surrounding San Pablo Ameyaltepec.

To create this mezcal, Maestro Delfino uses a single-pass, three-plate "reflux" style still that he crafted himself from copper and stainless steel.

Tasting Notes

  • The nose of this mezcal has hints of cinnamon, plump cherries, red Airheads, and under-ripe tropical fruit.
  • On the palate are notes of gingerbread, strawberry shortcake, and peppermint. 

The collection explores the maestro mezcalero's interpretation of subjecting agave endemic to the region to production methods and styles that have largely fallen out of favor in modern times. A significant portion of sales from the collection will be used for palenque improvement projects, which will help support the distilleries and communities in the Mixteca region.
