MAGIC ~ It is at this altitude that the low temperatures help our musts to ferment slowly, preserving the aromatic richness of the agave. Finally, after ten long days of waiting, we achieved the beloved second fermentation, also called malolactic, characteristic of the best wines and spirits in the world, revealing intense herbal and cooked agave notes unique to Tierra Noble.
CRAFTSMAN ~ Years of experience led our Tequila Master to perfect the subtle cuts. At this altitude, the low temperatures help our musts to ferment slowly, preserving the aromatic richness of the agave.
AGING ~ Long-lived White Oaks has given way to a new story of maturity. Our barrels made from 75-year-old American oaks and 150-year-old French oaks print aroma and softness to our tequilas that rest quietly, breathing and enriching themselves through each stave with a gentle aging thanks to the cold temperatures in our maturation room and to the ongoing passage of time.
