At Kilinga, we take pride in our founder and inspiration, the heart of our family. From seed to sip, our Bacanora is crafted to make her proud, using safe, sustainable, and environmentally-friendly farming techniques to nurture our agave at each step of production.
Our technique is what sets us apart. We fire-heat our volcanic stone ovens with mesquite from our fields, then seal the ovens and cook the agave for four days. After perfectly roasting the agave, we quarter and grind it in our stone mill, then ferment the agave pulp with the highest-quality water and cultured yeast.
Our Bacanora is double-distilled for crystalline purity, and in keeping with tradition, we allow it to rest until it's perfect. Each bottle of Kilinga Bacanora is a singular creation, authored and numbered, for you to savor.
We offer four distinct Bacanora offerings, each made with agave harvested at different stages of maturation. Our Bacanora Silvestre is made with wild agave plants, giving it the lightness of a springtime bouquet with subtle floral and herbal notes. The Bacanora Blanco is imbued with the rich sweetness of an autumn campfire, with bold toasted caramel and mineral notes. The Bacanora Reposado, aged in White American Oak Barrels from 6 to 10 months, has hints of vanilla, roasted coffee, and wildflowers. Finally, the Bacanora Añejo, aged in French Oak barrels from 34 to 36 months, has delightful hints of dark chocolate, tobacco, vanilla, and charred sugar flavors.
