Experience the Authentic Spirit of Chihuahua. Sotol La Higuera Texanum is a testament to traditional sotol production, meticulously crafted in Aldama, Chihuahua, under the watchful eye of Master Sotolero Gerardo Ruelas. Utilizing time-honored methods, the Dasylirion texanum is cooked in an outdoor conical oven fueled by wood and hot rocks, imparting subtle smoky nuances. The cooked plants are then milled by hand with axes, a labor of love that preserves the integrity of the agave relative. Fermentation occurs naturally with wild yeast in large 1,000-liter pine vats, allowing the local terroir to influence the spirit's character. Finally, the sotol is double distilled in copper alembic stills, resulting in a spirit of exceptional purity and depth.

- Aroma: The nose offers an intriguing bouquet of dried grass, reminiscent of the Chihuahuan landscape, intertwined with distinct mineral notes that speak to the region's soil. A delicate light smoke weaves through these aromas, a subtle hint of the traditional oven roasting.
