Another difference at El Pandillo is Felipe’s water use during production. He is the first to capture rainwater in his distillery to create unique flavor profiles in his tequilas.
Terralta tequilas are made from 100% blue Weber agave, grown in the highlands of Jalisco, which are known for producing agave with a sweeter, fruitier flavor than agave grown in the lowlands. The tequila is distilled in copper pot stills and aged in American oak barrels to give it a rich, complex flavor.
The unique flavor profile of Terralta tequila is due in part to the use of traditional production methods, such as using a tahona (a large stone wheel) to crush the cooked agave and fermenting the juice in wooden vats.
