This Friday, June 12th, from 5:00 PM to 8:00 PM, we are thrilled to welcome Tequila Laelia to the SF Tequila Shop for an exclusive, complimentary in-store tasting. Before you step up to the counter this weekend, we wanted to pull back the curtain on what makes this incredible brand a standout addition to our shelves.
Rooted in the Volcanic Soil of Amatitán
The story of Laelia begins in Amatitán, Jalisco, a region revered as the birthplace of tequila. The distillery relies on the deep expertise of a fourth-generation family of agave growers. For decades, they have tended to fields nestled in mineral-rich volcanic soil, which imparts a signature earthy, robust quality to the Blue Weber agave plants. Unlike industrial brands that harvest prematurely, Laelia allows their agaves to mature completely, absorbing the characteristics of the land until their sugar levels are perfectly peaked.
Honoring Pre-Hispanic Traditions
What truly sets Laelia apart in a crowded market is their unwavering commitment to traditional processing. Walking through their production steps is like stepping back in time to the origins of the craft:
- Brick Oven Baking: The harvested agave hearts (piñas) are slow-cooked in traditional brick ovens. This patient, low-heat process caramelizes the natural sugars without scorching them, preserving the bright, vegetal notes of the agave.
- Tahona Milling: Instead of modern mechanical shredders, Laelia utilizes authentic tahona milling. A massive stone wheel slowly crushes the cooked agave, gently extracting the rich juices while preventing the release of bitter, undesirable compounds.
- Mountain Spring Water: Water is the unsung hero of spirit production. Laelia utilizes pure mountain spring water during the fermentation process, ensuring a clean, crisp, and exceptionally smooth mouthfeel.
